This meal is so good. Very filling, but without weighing you down. It was inspired by a meal my mom used to make called Yokasobi (I never saw it written down, so I am totally guessing that is how you spell it). It was a simple noodle & beef dish. Add a little soy sauce & that was about it. Having such fond feelings toward that dish, I decided I wanted to create my own. However, par for the course, it need some bulking up to make it more filling, nutritious, & cost-effective.
With the classic beef & broccoli combo from chinese take out in mind, I came up with this. Just thinking about it I can taste it. The soy sauce & addition of the Worcestershire give it a full flavor, but a little bit of vinegar cuts through the fullness perfectly.
This is a crowd pleaser & could easily feed a crowd too & with only 9 ingredients (a few of which should be pantry staples) it is incredibly easy.
Vegan- replace beef with mushrooms to maintain the meaty flavor without the meat.
Wheat Free- Use Tamari (gluten free soy sauce) & Brown Rice or Quinoa Noodles. (I don’t use enough Worcestershire for the barley extract to be a wheat concern for us).
